Good morning, I hope everyone had a terrific weekend.
It was a bit nippy here in Colorado so I decided to stay in, like the couch potato I am, and try a few new recipes.
Last night we had stuffed bell peppers and, if I do say so myself, they were fantastico!
The only thing I would have changed is the amount of liquid that was added to the pan before cooking. As you can see, the liquid cooked off and burnt around the edges of my casserole dish.
The peppers were stuffed with sauteed veggies and quinoa. I found this recipe in Vegetarian Times and you can find the recipe here. I added more cumin , a bit of chili powder and a touch of cayenne, next time I will add more liquid to the casserole dish and then it will be perfect!

Next, my sweet tooth was screaming at me to make a chocolate goody..anything chocolate!! I visited one of my new favorite blogs Elana's Pantry and found this heavenly chocolate brownie!
I did not change anything. The brownies are full of chocolate flavor, light, moist and absolutely perfect.

LOVE stuffed peppers. And, good idea using red - they are so much tastier than green I think. My husband doesn't like bell peppers, so I rarely get to ever enjoy these!

Wow lots of life changes! Very brave but noble:) I really like quinoa so that bell pepper dish looks really good! That sandwhich looked good too...sorry you couldn't enjoy it:/
ReplyDeleteWOW WOW WOW! Those stuffed peppers look amazing and I am going to make them! I have always hated stuffed peppers, because I always had the green bell peppers with rice and hamburger meat (yik). I love your recipe!
