Fish Tacos

As most of my friends know, I live alone during the work week so I do not have to drive from Loveland every day. I drove that route for three years and decided I did not want to get up at 3:30 am, get ready for work, travel I 25 for an hour, work ten hours and then travel back another hour. No, THIS WAS NOT FOR ME!

So..I bought a Condo and stay in Thornton during the work week and then depending what we have going on,  we either spend the weekend in Loveland or stay at the Condo. Loveland will be a great place to retire, but for now this seems to work.


Since I am alone, I like to make easy dinners when I get home.  My new favorite meal is Fish Tacos which is easy to put together and you can use any kind of fish that you like. Some people may prefer a firm fish but when it comes to fish ..I Like Them All!!
Two of my all time favorites are Salmon and Trout. I thought I would share my basic recipe then you can modify it to taste.


The first thing I do is make a Chipotle Mayo:




My Basic Ingredients


 In a bowl:   Mayonnaise
                      Cumin
                      Paprika
                      Smoked Chipotle
                      Sriracha
                      Cayenne pepper
                      other spices you like: some finely grated garlic
                                                        spring onions
                                                        the sky is the limit



Use the amount that you think you, or your family, would like. Good thing is there is no right or wrong. I just sprinkle the spices in then add to taste. I like mine very spicy so I am pretty heavy handed!



                                                                        


After tasting, I felt this needed an extra zip. I did not have a lime so decided a smidge of vinegar would help.


Vinegar and Garlic..now we are talking!


Again, just add and mix to taste. Simple and DELICIOUS!    I like to make this in advance, put it in the fridge and let the flavors marry.



Next, I prepare the fish to put on the BBQ.

 This dinner is so easy and very little cleanup!

Close the lid an cook until done!

I usually cook my salmon about 15 min because I like it very moist. On the other hand, Bill likes his fish on the medium to well done side, so I cook his about 20 min.

I  heat the tortillas on the griddle. I prefer corn tortillas but flour, or wheat, would taste good. I like to use a little olive oil on the griddle then heat until soft. You can also just heat on the grill wrapped in foil or place the griddle on the grill grates.

I then begin to assemble the tacos. You can use anything you want from fresh salsa, mango salsa, cabbage for crunch, green onions..your imagination is the key. This night the fridge was pretty bare so I had cabbage, chipotle mayo and salsa. I was too lazy to make guacamole, instead I just sliced some avocado.






 This is a very quick and easy meal especially after a hard day at work.      



I like loads of fresh ground pepper on my avocado!




As you can see below my kitchen at our Condo is a tad on the small side.LOL

We have a very nice gourmet kitchen in Loveland but I can make just as nice meals in our petite kitchen.
I enjoy cooking and find it to be relaxing after a stressful day at work.  I like to pour a glass of wine,  start chopping,  cooking and watch someone I love enjoy one of my meals!   Even better is to have my wonderful Hubby in the kitchen cooking with me. When we got married Bill said he could not boil water....and he was right.  Now, he enjoys cooking with me and is really perfecting his knife skills!
